Summer Essentials: Vanilla Superfood Mixed Berry Fro-Yo Pops!

top We go through popsicles around here like nobody’s business in the summer. I could buy them … but why would I when I can make them on my own at a fraction of the cost, in mere minutes, chock full of superfood goodness? The days are long and activities of many these warm, luxurious days and my kids need all of the extra energy and dense nutrition they can get. I used their favourite fro-yo combo (mixed berry) as the base inspiration for these healthy little treats and added some of our vanilla shakeology into the blender with some frozen berries, coconut water and coconut yogurt. You can of course, make them without coconut water and use regular dairy yogurt too!

But I wouldn’t skimp on the superfoods because every parent of young children knows that the blender is the best way to sneak healthy ingredients into their busy little bodies every chance we can get …

IMG_1879 I especially love how easy these are to let said children help make! Getting busy in the kitchen together is one of our favourite past-times, we’re teaching them some basic life skills while having fun. So, that’s good I guess. We’re getting all Montessori and whatnot.

Summer Essentials: Vanilla Superfood Mixed Berry Fro-Yo Pops!

This is a double recipe! And usually only lasts a week around <g class="gr_ gr_58 gr-alert gr_spell ContextualSpelling ins-del multiReplace" id="58" data-gr-id="58">here</g> with our kids and neighbourhood kid hand-outs.
What You'll Need
  • 2 scoops vanilla shakeology
  • 1 container of coconut yogurt (or regular FULL FAT action, becasue we know that healthy fats are good fats yea? And that reduced or fat-free dairy products not only taste like ASS, but are full of some type of sugar to make them taste half decent which totally defeats the "reduced fat" purpose.)
  • 3 cups of frozen mixed berries (I used wild blueberries, strawberries and raspberries all purchased from the discount rack that I scored and washed with a light water/vinegar rinse and tossed into freezer bags. Love this time of year for fresh harvest deals.)
  • 1 cup of coconut water
How You Do
  1. Toss all ingredients into your blender (the vita-mix is my boy-friend and gets used on the daily STEADY), and whizz.
  2. Pour into some BPA-free popsicle molds. This recipe will fill 2 12 pop molds. Or paper cups a la Pinterest if you really want, but then you have to get all finicky with tinfoil and wooden sticks. Meh. I'm all about simple.
  3. Freeze for 4-6 hours and enjoy!
